I've kept defibrinated and anti-coagulated blood for 4-5 weeks, and still had plenty of intact RBCs. I don't know what biochemical changes might have occurred, but the RBCs look normal. After 1-2 weeks the plasma gradually gets redder as RBCs lyse and release hemoglobin, but there are still lots left after 4-5 weeks. Eventually the whole thing will kind of clot. If there's any kind of bacterial or yeast contamination in the blood, it can go bad much faster.
